This has been aged on the bone over 100 days. White park is the most ancient and rare breed in the UK! Dating back to year 847. Direct descendant of something called the aurochs. The original cow 17000 years ago. From a farm in Stockbridge Hampshire. A farmer called Michael Matthews.

Rack of Treacle Cured Blythburgh Pork, Apple Sauce | £80
This pork is a special blend of two breeds of pig called a Jersey Red Duroc and a Yorkshire Large White. Sourced from Blythburgh Farm. Served with apple sauce from Sopley, blistered in our Wood Oven.

Best End of Dorset Lamb, New Season Wild Garlic Pesto | £100
Best end of Dorset Lamb cooked slowly in our wood oven served with new season wild garlic, made into a pesto using sunflower seeds instead of nuts.
